Rice | Healthy egg fried rice

Hi everyone, in this video I’m going to show you

how to cook a balanced healthy fried rice from scratch.

including cooking rice and prepping the ingredients.

Using just these ingredients easily available in the market.

Let’s begin by cooking 1 cup of rice enough for 2 person.

Wash the rice in tap water a few times

to remove the excess starch and any dirt or dust.

Keep the washing water to water you plants.

Then refill jug with 1 &1/4 amount of water for the rice to cook well in the steamer.

Steam the rice for a minimum of 30 minutes before removing it from the steamer.

Check the doneness by tasting, next step we need to dry the rice quickly

When it’s done, loosen the rice in a large bowl to allow the moisture to evaporate .

Next beat 2 eggs with a pinch of salt.

beat until it’s light and airy, with no lumps of egg whites.

best indication is some bubbles on top.

Let’s prepare the long beans by chopping them up into smaller pieces.

this will ensure even cooking when frying the rice.

Long beans are a good source of protein and fibre but if you can’t get long beans string beans work too.

Once done chopping, put them aside in a bowl.

Tomatoes, just cut them into bite size, any size is fine

Tomatoes increases the fiber content of the fried rice

and your daily intake of Vitamin C and Potassium.

After cutting them I put them into a small bowl for use later.

Add in some spring onion to make the rice fragrant,

I removed the thicker parts so that I can fry them first then add in the green parts later on.

After I am done chopping the green onions, I put them aside to add in later.

Now I’m chopping chilli padi or bird’s eye chilli or 小辣椒 to go with the rice later.

Crush, chop and mince garlic

Put all the minced garlic into a sauce dish.

Set the bird’s eye chilli aside and let’s move everything I need for frying onto the stove.

Let’s move to the stove.

and light the fire.

Heat the pan and add some oil.

Add garlic

Slightly brown and soften them

Add in the long beans and keep stirring.

Add in the rice with the thick spring onions and keep stirring.

When you see some crispy brown bits on the surface of the rice add in the egg.

Stir & coat the rice grains with eggs.

Add in the tomato last.

When done place the fried rice in a bowl and let’s fry an egg

I washed up the pan and heated up some oil in it.

Crack in an egg and enjoy my favourite sound.

The sound of frying an egg.

Let’s flip the egg.

Done, let’s plate the fried rice and the egg.
