How my family usually fries 4 angled beans
with crispy anchovies
Like any other vegetables, wash the beans thoroughly with water.
Then grab a handful of anchovies and rinse thoroughly
To remove an excess sea salt
so that they are not too salty after cooking.
Remove the top and the end of the beans

slice the beans to about 1 cm thickness

Next, prepare a few cloves of garlic.

It doesn’t matter if you add slightly more or less.

Heat up your wok with medium fire for a few minutes.
This will prevent your garlic from sticking to your wok.
Add some oil, approximately about 5 tablespoons full
First, fry the anchovies until they are brown and fragrant.
Keep frying.
Once it looks brown, push the anchovies aside.
Let the oil pool at the opposite end and fry your garlic immediately.
Make sure the garlic and the anchovies stay separated.
So that the garlic continues to brown and the anchovies remain crispy.
Keep stirring your garlic
Don’t stop stirring or else the edges will turn black before the centre is brown.
Once your garlic is fragrant and brown, add in your beans.
Then add a bit of water to create steam.
In order to cook your beans.
Keep the anchovies and beans separated.
By tilting your pan so that the sauce stays away from the anchovies.
